The Borgo estate supplies both the inspiration and ingredients for its two Michelin-starred restaurants, Meo Modo (on site) and La Bottega del Buon Caffè (in Florence). A collaboration with the estate's biodynamic culinary gardeners means that the restaurants' executive chefs are able to design plates from the source throughout the year, as the principles of biodynamic cultivation mean that size, colour, flavour and shape can be enhanced and shaped naturally.

Each day the estate's farmer collects milk from Borgo's sheep and goats, which is then transformed into artisan cheese and yoghurt and served at the breakfast buffet, alongside free-range eggs straight from the farm and raw honey collected on-site from Borgo’s own bees. The Borgo estate also includes an artisan cheese dairy that produces and sells fresh hand-crafted pecorino, as well as extensive vineyards and tracts of forest housing a drove of acorn-fed pigs, which supplies a range of traditional Tuscan cured meats. Even the alpacas do their bit, producing luxurious fibres for the Borgo cottage wool industry.

Executive chef Andrea Mattei and his team work in collaboration with farmers and culinary gardeners to design fresh, seasonal dishes to measure that are firmly rooted in his native Tuscan soil. His approach extends not just to the flavours of the territory but also its tactile, olfactory and visual landscape: various courses are served on stones dug up from the nearby River Merse or wedges of local cork; a dish of suckling pig and acorns is accompanied by a smouldering fire of sweet-scented hay; while visitors approaching the Borgo Santo Pietro estate along the striking cypress-lined drive find their hand-made chocolate dusted with the very same cypress needles at the close of the meal.

Located within a thirteenth-century villa with panoramic views over the Valle Serena from the terrace, Meo Modo features an outstanding boutique wine cellar that houses close to 1000 carefully selected labels representing rare vintages and artisan producers primarily sourced from Tuscany and Italy. Role requirements

As Head Gardener you will be responsible for managing the gardening team. Extensive plant and landscaping knowledge is essential, as well as a good understanding of organic methods and sustainable horticultural techniques. The role requires excellent attention to detail, a good eye, and dedication to maintaining five-star standards. It is overseen by the Estate Manager, who is also responsible for the harvest, vineyards, farm animals and livestock. This is a very hands-on role, so expect to get your hands dirty! You will need to be able to collaborate effectively with farm and garden staff, multi-task, and take responsibility for unexpected situations when they arise. 

About you

We are looking for a confident, committed and hands-on candidate with excellent communication skills. Our gardens are an intrinsic part of the estate, and as Head Gardener you will be the public face of the gardens and often present the estate to guests. You need to be highly organised and physically fit, fluent in English and ideally possess good Italian skills. Italian lessons will be provided as part of your role if necessary.
